The days continue to fly by and as we near our return to the sunshine state, we make the most of each moment here.  It wouldn’t be right to have come this far and depart without sharing some time with my Uncle Bud, who now calls Oregon home.  My Uncle Bud has been working on a few projects since retiring and moving to college town of Corvallis.  One of my favorites, called Oregon Soup, is his project looking at Oregoneons views and hopes for the future.  Uncle Bud is a fantastic story-teller and our time with him included great conversation.  On our first night, after some tasty carrot soup, made from home grown carrots,  Uncle Bud and his wife Marci taught us cribbage.  Both of them are competitive and experienced players, but Melissa and I put up a match regardless.  The battles continued throughout the next 48 hours and included a few skunks along the way, but all-in-all we were excited to learn and have our first challenge be a memory to take with us.

Our final morning, Uncle Bud prepared what has become somewhat of a tradition during our last few visits, the infamous Aebelskievers.  Aelbelskievers are a type of pancake, a common item in a Danish breakfast.  The recipe that has been used for many years, includes buttermilk and whipped egg-whites, making them so rich and tasty.  My dad remembers his father, my Grandpa George, preparing them for him as a child and the first time I had them was with my Uncle Bud about 5 years ago.  It was so fun preparing them and even more enjoyable eating them with warm real maple syrup and powdered sugar.  A breakfast not to be eaten too frequently.

We are still working on program needs to Klamath Outdoor Science School and excited about the potential of backpacking and cross-country skiing this weekend on fresh snow at Crater Lake.  Next week we will be returning to Los Gatos, before a quick turn around to San Luis Obispo for a wedding.  Then we will work diligently to prepare our resupply packages and tie up the final loose ends before we begin.  Until next time, smile and be well. ~ Justin
